This dish satisfies three basic requirements: It is simple, it is healthy and it tastes good. For children, this might be one easy way to get them to eat theirgreens—flavoring them with sesame seeds and sesame oil. The nutty flavor of the former and the earthy flavor of the latter create a satisfying dish. Reminiscent of Korean side dishes (or the Korean banchan), their geographic neighbor’s cooking has long been a source of culinary inspiration for the Japanese. (Serves 2)
1 bunch spinach (or any other dark leafy green)
Sesame oil to taste
Sesame seeds to taste
Large saucepan, sieve, paper towels
1. Bring a large saucepan of water to a boil.
2. Meanwhile, thoroughly wash the spinach, and separate the stems from the leaves, cutting both into bite-size chunks.
3. Once the water is boiling, add the stems, and lightly boil for a few minutes. Then add the leaves.
4. When the spinach is cooked through, drain it through a sieve, and rinse under cold water to preserve the color and texture. When the greens are cooled, thoroughly squeeze out as much moisture as you can using your hands and paper towels as necessary.
5. Place the spinach in a bowl, and toss with sesame oil and sesame seeds to taste. Chill and serve.
