1 bunch (handful) komatsuna or bok choi, chopped into bite-sized pieces
1/8 small cabbage, chopped into bite-sized pieces
4 pieces of cooked bacon, chopped
1 teaspoon olive oil
1 teaspoon sugar
½ tablespoon soy sauce
1 tablespoon vinegar
1. Bring a pot of water to a boil and quickly blanche the cabbage and komatsuna.
2. Run the greens under cold water and squeeze out the excess moisture with your hands or paper towel.
3. Toss the cooked greens, bacon and all remaining ingredients in a bowl. Chill and serve!
